Ingredients:
  • 2 slices of focaccia
  • 200g mortadella
  • 1/2 cup of stracciatella
  • 2 tablespoons chilli crisp oil
  • 1/2 cup pickled red onions
  • 2 spring onions, thinly sliced
Instructions:
Step 1: Prepare the Focaccia
  1. Slice and Toast: Begin by slicing the focaccia into 2 even pieces. Place the slices on a baking sheet and toast them in the oven at 180°C (350°F) for about 5-7 minutes, or until they are golden brown and crispy. This will give your panino a perfect crunch.
Step 2: Prepare the Burrata Cream
  1. Prep the stracciatella: While the focaccia is toasting, prepare the stracciatella cream.
Step 3: Assemble the Panino
  1. Assemble the Sandwich:
    • Spread a generous layer of stracciatella on the bottom slice of the toasted focaccia piece.
    • Add a few slices of mortadella on top of the stracciatella.
    • Drizzle the chilli crisp oil over the mortadella for that spicy kick.
Step 4: Add the Toppings
  1. Add the Pickled Red Onions: Place a handful of pickled red onions on top of the mortadella. The tangy pickled onions will balance the richness of the burrata and the spiciness of the chilli oil.
  2. Garnish with Spring Onions: Sprinkle the thinly sliced spring onions over the top for a fresh and vibrant finish.
Step 5: Final Touches

  • Chilli Crisp Oil: Adjust the amount of chilli crisp oil according to your spice preference. If you like it extra spicy, add a little more!
  • Pickled Red Onions: You can make your own pickled red onions by soaking thinly sliced red onions in a mixture of vinegar, sugar, and salt for at least an hour.
